How to Store Pizza Bases: Fridge, Freezer, and Shelf Life Guide
You’ve ordered your pizza bases, they’ve arrived fresh via refrigerated delivery — now what? Proper storage is the difference between a base that bakes perfectly three weeks later and one that ends up in the bin.
Here’s everything you need to know about storing pizza bases at home or in a commercial kitchen.
Refrigerator Storage (2–4°C)
Fresh pizza bases from Pizza Base Thailand arrive vacuum-sealed and chilled. In your refrigerator at 2–4°C, they’ll stay in perfect condition for up to 15 days from the date of production.
Tips for fridge storage:
- Keep the original vacuum-sealed packaging intact until you’re ready to use them
- Store on a flat shelf — don’t stack heavy items on top, as this can compress the base
- Place them away from the back wall of the fridge where temperatures can drop below 0°C
- Once opened, use within 24 hours for best results
Freezer Storage (-18°C)
For longer storage, freeze your bases as soon as possible after delivery. At -18°C, pizza bases maintain excellent quality for up to 6 months (90 days for optimal results).
Tips for freezer storage:
- Freeze in the original sealed packaging — it’s designed for this
- If you’ve opened a pack, wrap individual bases tightly in cling film, then place in a zip-lock freezer bag, removing as much air as possible
- Label with the date so you know when they were frozen
- Store flat — stacking is fine once frozen solid, but freeze them flat first
How to Defrost
Best method (recommended): Move from freezer to fridge the night before you plan to use them. They’ll thaw gradually over 8–12 hours, maintaining optimal texture.
Quick method: Leave at room temperature for 30–45 minutes. This works fine but the base may be slightly softer than a fridge-thawed one.
Can you bake from frozen? Yes, but add 2–3 extra minutes of baking time. The result won’t be quite as crispy as a properly thawed base, but it’s absolutely acceptable for a quick meal.
Storage Comparison Table
| Method | Temperature | Shelf Life | Best For |
|---|---|---|---|
| Refrigerator | 2–4°C | Up to 15 days | Regular use within 1-2 weeks |
| Freezer | -18°C | Up to 6 months | Bulk storage, stock-up orders |
| Room temp (opened) | 25–30°C | Use same day | Immediate use only |
Signs a Base Has Gone Bad
- Visible mould (any colour — white, green, or black spots)
- Sour or off smell when you open the packaging
- Slimy or sticky texture on the surface
- Significant freezer burn (dry, discoloured patches) — still safe to eat but texture will be poor
When in doubt, throw it out. Our bases contain zero preservatives, which means they’re 100% natural but also more perishable than mass-produced alternatives.
For Restaurants: Rotation Tips
If you’re using pizza bases commercially, follow the FIFO (First In, First Out) principle. Mark each delivery with the received date and always use the oldest stock first. A well-managed rotation means zero waste and consistently fresh product on every plate.
